So, I have been cooking so much lately and everything has been turning out so delicious, I have decided to share a few recipes through here. The first recipe I want to share is something I made earlier this week: Buffalo Bleu Cheese Chicken Meatballs. Full disclosure, I never measure anything when I am cooking so the ingredient listing is all just suggestions and you will have to use your eyes and your judgement, good luck!
To start off here are the ingredients you will need:
- One pound of ground chicken
- Bleu cheese crumbles
- Chopped green onions
- Almond flour
- Buffalo sauce
- Arugula (for garnish)
- Carrots and celery (for a side/snack)
Start by combining the ground chicken, chopped green onion, bleu cheese crumbles and almond flour into a bowl. Mix it up until all the ingredients are distributed evenly. Once everything is mixed up, mold into balls. Drizzle olive oil lightly over a frying pan and cook meatballs in the pan until the outsides are slightly browned. Pre-heat the oven to 350 degrees.
Once the meatballs are partially cooked, arrange the meatballs tightly in a cooking sheet and drizzle with buffalo sauce (be as generous with the sauce as desired). Bake the meatballs in the oven at 350 degrees for 10 - 20 minutes or until fully cooked.
Once the meatballs are cooked, remove from oven and reapply buffalo sauce. Garnish with arugula, maybe a few more bleu cheese crumbles and enjoy! Shouts to ACleanBake.com for the inspiration.
